At Swim by Alba HQ we are obsessed with two things, bikinis and hash browns! With the sad news of McDonald's closing aka our go-to place for hash browns, we decided to take matters into our own hands and make our own.


Introducing...the Swim by Alba 'Sweet Potato Hash Browns'

Ingredients:

2 large sweet potato - peeled and grated

2 carrots - peeled and grated

1 onion – finely chopped

½ cup of vegan cheese – grated (we love Violife)

2 garlic cloves – minced

1 tbsp of nutritional yeast

1 tbsp of almond flour

1 tsp paprika

1 tsp vegeta

A sprinkle of salt and pepper to taste



  1. Pre-heat your oven to 180°C.

  2. Once peeled, grate the sweet potato then use a tea towel to remove as much moisture as possible. You can do this by folding a towel around the grated potato and squeezing it tightly to remove the excess into your sink or a bowl.

  3. Add the grated sweet potato to a bowl and also add the grated carrots, onion, garlic, nutritional yeast, cheese, almond flour and the rest of the seasonings.

  4. Use a wooden spoon or spatula and combine all the ingredients together.

  5. Grease your tray (we forgot to the first time round oops) or use baking paper.

  6. Take a small handful of the mixture and place it on the tray, you can shape this into a circle or square. 

  7. Make sure they are at least 1cm thick, repeat until all of the mixture has been used up. Drizzle with olive oil and pop it in the oven.

  8. Bake in the oven for around 40 minutes, depending on how cooked you like them.

  9. And serve! We love to eat ours with a side of roasted vegetables and avocado!
